The informal grazing menu starts with a cold course featuring Japanese flavours, with a house-smoked salmon, beetroot chips and dill and yuzu crème fraiche. This influence is also showcased in the Japanese pumpkin with miso caramel, crispy kale and candied pumpkin seeds – a superbly sweet and full-flavoured side.
An indulgent fried chicken waffle with burnt orange maple and slaw evokes pleasant memories of casual fare, with refined flavours that appeal to a sophisticated palate. The showstopping smoked slow-cooked lamb rump with salsa verde, caramelised pickling onion and fresh herbs and dukkha mixes strong aromatic spices for a memorable main dish.
A dessert of wild rice pudding with coconut chips, raspberry, cocoa nibs and pistachio praline rounds out the afternoon as you bask in the last of the sunshine.
